
If there is anything i have struggled so much with just getting around to making, it’s these berry galettes. The plan was to make them last week but my work life turned upside down when i was given a client on the opposite end of the earth and i found myself working at odd times of the day/night and constantly feeling tired. Today i finally decided to make the galettes and i was pleasantly surprised. They smelt so wonderful and i gleefully watched the ice cream melt on top of the hot galette. Am i too old to be excited by the thought of ice cream melting ? i don’t think so.

INGREDIENTS
- 1 packet (400g) shortcrust pastry
- 2 cups of frozen berries, drained
- 1 egg yolk whisked
- Castor sugar for sprinkling
- 50g almond flakes (i used way less than that)
- icecream for serving *optional

Method
- Preheat oven to 90 degrees. roll pastry out on a lightly floured surface to 3mm thick
- Using a sharp knife cut 12-14 cm circles out of pastry and place on a lined baking tray
- Pile berries in the centre of the pastry leaving a 2-3 cm border all around
- Fold over the edges of the pastry to enclose the berries (don’t cover completely
- Pinch seams to hold pastry in place
- Brush sides of galettes with egg and sprinkle almonds and the castor sugar on top
- Bake for 25-30 mins
