Timmy has been begging me for the past few months to make ma fat cook for him and a few weeks ago he actually attempted to make them and they were such a flop (haha). A few days ago, my mum posted a picture of freshly made fat cooks and it really reminded me of our childhood. How i miss my mum’s cooking! I did ask her for the recipe and in true motherhood style she gave me a recipe with no measurements and in her words she said use your instincts and you will be fine (haha, thanks mum).

Honestly the struggle was real with this one, i had to guess the measurements , the heat etc and i found myself adding more and more flour so it could thicken up but the dough kept spreading! In the end, i came up with delightful, tasty, jackflap looking bhanzis. Tim said they had personality and thats what matters the most.

Here is an estimate of ingredients i used
- 2 cups self raising flour
- 1/2 cup milk (extra needed if dough is too thick)
- 1 egg
- 1/4 cup sugar
- pinch of salt
Method:
Mix all ingredients together. Let dough rest for 10 mins. Heat oil in pan on medium heat and fry.
ENJOY!
