So i have been in baking overdrive and my husband is totally living for it. The day before i had baked a marble cake and my sister came by my house and unfortunately took the whole cake so the next day i decide to bake another one plus i also wanted to test out my new pyrex glass loaf tin which i had purchased from takealot. The cake was super soft and moist. We had a prayer session at our house and i served it with tea and i must say it was a hit. Anyway here is the recipe
Ingredients
- 2 cups cake flour (500 ml)
- 1 cup castor sugar (250 ml) i used half a cup coz sugar is not my thing
- 1 teaspoon vanilla essence (5 ml)
- 3 tsp baking powder (15 ml)
- 175 ml of milk
- 3 eggs
- 1/2 cup margarine (125 ml)
- Pinch of salt
- 1 tablespoon cocoa powder
Method
Cream the margarine. sugar and vanilla well. (Use a wooden spoon, mixers are for wussies). Add the eggs one at a time, beating well with a wooden spoon one after the other. Add the milk alternating with sifted flour and baking powder and blend with the wooden spoon. Pour a quarter of the mixture in another bowl and add the tablespoon of cocoa to the 1/4 mixture.Scoop the vanilla mixture into a 25 cm greased loaf pan and then add the cocoa mixture to the vanilla mixture. Using a toothpick or a fork, swirl the mixture to your desired pattern. Bake at 170 degrees for 50 minutes. Turn out and cool.
